Ingredients

  • 1 poundpork tenderloin

  • Marinade:
  • 1/2 cup red wine

  • 1/2 cup Brown sugar

  • 1/4 cup red wine vinegar

  • 1/4 cup ketchup

  • 1/4 cup hoisin sauce

  • 3 clove garlic, minced

  • 2 tablespoon Soya sauce

  • 1 teaspoon Chinese Five Spice powder

  • 1 teaspoon ground ginger

  • 1/2 teaspoon sea salt

  • 1/2 teaspoon ground pepper

  • Stuffing:
  • 4 cup crumbled cornbread (STUFFING)

  • 1 onion, (large, finely minced and sauteed in butter)

  • 1 egg

  • 1/4 cup chopped chives (chopped)

  • 1 teaspoon sage

  • 1 dash salt and pepper to taste

  • 5 tablespoons chicken stock (enough to make stuffing easy to spread.)

Directions

  • Mix all marinade ingredients
  • Soak tenderloin overnight, in the fridge
  • Filet out the tenderloin
  • Spread the stuffing all over the tenderloin
  • Roll it back up
  • Tie it up and bake at 400 degrees for ~35 minutes
