Lebanese Beef Kofta

Not your ordinary Kabobs, these Koftas have tremendous flavour and are best suited for charcoal cooking.

Ingredients

  • 1 lb Lamb (or Beef/Veal)

  • 1/2 TSP Ground Coriander

  • 2 TSP Aleppo Chili Flakes

  • 1 pinch Cayenne Pepper

  • 1 pinch Ground Cinnamon

  • 1 TSP Ground Sumac (Optional)

  • Spice Blend
  • 2 TBSP Cold Water

Directions

  • Make your spice blend with Coriander, Chili Flakes, Cayenne, Cinnamon. Set aside 1/3 of the mix, and mix that with the sumac
  • Make the kofta by mixing the spice blend, water and ground meat. Mix well, cover and refrigerate for one hour
  • Remove meat and divide into 8 portions. Using your hands, shape each portion into a longer more flat length. Apply that to the skewer, pressing firmly to ensure contact.
  • Back into the fridge for 30 minutes to firm up
  • Remove Kofta, and sprinkle with the reserved spice blend.
  • Grill over medium direct heat until cooked.
  • Serve with rice, pita, Hummus, Lebanese Garlic Sauce, Tzatziki…so many options.
