Fridge Dill Pickles

minuteWho knew delicious pickles could be so fast? A Vacuum Chamber makes a huge difference.
Ingredients
2 pounds of Kirby or Mini Cukes, sliced once, lengthways
1 & 1/4 Cups White Vinegar (5% acidity)
2 TBSP Kosher Salt
2 TBSP Sugar
2 TBSP Coriander Seeds
6 – 100 cloves of Garlic (Base recipe is 3 per jar but I use 8)
1 TSP Mustard Seeds
1/4 TSP Red Pepper Flakes
16 branches of Fresh Dill
Directions
- In a small pot, add the Salt, Sugar and Water. Heat only till dissolved.
- Add 2 cups of ice cold water and put aside
- Into each jar, add your cucumbers, seasonings and dill
- Pour your brine liquid into each jar.
- Close jars and put in the fridge for a few days. OR if you have a vacuum attachment or chamber, use that to make pickles in 24 hours!
Notes
- This is a very basic recipe, add your own flavours.
- The extra garlic can make your pickles a bit spicy
