Chip Shop Curry Sauce

Ingredients

  • 1 large Onion, sliced thinly

  • 3 cloves Garlic, minced

  • 10g fresh Ginger, chopped

  • 1 TBSP Tomato Paste, heaping

  • 1 TBSP Vegetable Oil

  • 1 TSP Cumin

  • 1 TSP Coriander Seeds, ground

  • 1 TSP Turmeric

  • 1/2 TSP Chili Powder

  • 1 TBSP Garam Masala

  • 200 ml Chicken Stock

  • 1 tin Coconut Cream, or milk

  • 1 TBSP Honey

  • 1 TBSP Soy Sauce

  • 2-3 TBSP Corn Starch/cold water slurry to thicken

Directions

  • Soften the onion in Vegetable Oil, then add Garlic, Ginger, Tomato Paste and cook out for 3 minutes
  • Add spices and continue to stir for another couple of minutes
  • Stir in Coconut Cream and simmer for 30 minutes on low heat
  • Blend until smooth and serve right away.

Notes

  • We use this sauce all the time, great for making meat pies too!
