Ingredients

  • 3 tablespoon Butter

  • 1 1/4 cup heavy/whipping cream

  • 3/4 half & half cream

  • 1/3 cup grated Romano cheese

  • 1/3 cup grated parmesan cheese

  • 1/8 teaspoon ground nutmeg

  • 1 dash salt and pepper to taste

  • 2 egg yolk (egg)

Directions

  • Melt the butter in a pan over med-low
  • Add the creams, whisk constantly over med, (warm it up but do not boil)
  • Add the cheeses and seasonings, continue to whisk
  • Once the cheeses have melted, add the egg yolks
  • Gently simmer over low for 3 – 5 minutes.

Notes

  • Garnish with fresh parsley and more Parmesan cheese
  • I add leftover BBQ meat to my sauce, the smoke imparts a wonderful flavour!
  • The sauce might seem a little thin at first, but once it’s poured on the pasta and you let it sit for a minute, it’s quite nice
  • For a thicker sauce, use all whipping cream instead of using half & half
