Smashed Cucumber Salad

4 Cucumbers, medium size
1 TSP Kosher Salt
2 TSP Granulated Sugar
1 & 1/2 TBSP Rice Vinegar
2 TSP Sesame Oil
2 TSP Soy Sauce
1 TSP Extra Virgin Olive Oil
2 cloves Garlic, minced
2 TSP White Sesame Seeds, toasted
Red chili flakes and Cilantro to garnish
Directions
- Rinse and dry Cucumbers. Cut cross-wise into pieces about 4″ long, then cut those lengthwise
- Lay Cucumbers on flat surface, cut side down. Press down on the flat of your blade, using your hand, to break/smash the pieces into bite-sized.
- Place Cukes, big pinch of salt and big pinch of sugar into a strainer. Place weight on top of the cukes to help drain. Ice is a good weight here. Drain for 15-30 minutes, up to 4 hours.
- Make the dressing using Salt, Sugar, and Rice Vinegar. Stir till mixed.
- Stir in Sesame Oil and Soy Sauce to the dressing.
- Drain any residual water/juices in the cukes and transfer to a large bowl.
- Add dressing (to taste, start with some, add more gradually) and mix gently but well.
- Serve garnished with chili peppers and cilantro
