Ingredients

  • 4 Cucumbers, medium size

  • 1 TSP Kosher Salt

  • 2 TSP Granulated Sugar

  • 1 & 1/2 TBSP Rice Vinegar

  • 2 TSP Sesame Oil

  • 2 TSP Soy Sauce

  • 1 TSP Extra Virgin Olive Oil

  • 2 cloves Garlic, minced

  • 2 TSP White Sesame Seeds, toasted

  • Red chili flakes and Cilantro to garnish

Directions

  • Rinse and dry Cucumbers. Cut cross-wise into pieces about 4″ long, then cut those lengthwise
  • Lay Cucumbers on flat surface, cut side down. Press down on the flat of your blade, using your hand, to break/smash the pieces into bite-sized.
  • Place Cukes, big pinch of salt and big pinch of sugar into a strainer. Place weight on top of the cukes to help drain. Ice is a good weight here. Drain for 15-30 minutes, up to 4 hours.
  • Make the dressing using Salt, Sugar, and Rice Vinegar. Stir till mixed.
  • Stir in Sesame Oil and Soy Sauce to the dressing.
  • Drain any residual water/juices in the cukes and transfer to a large bowl.
  • Add dressing (to taste, start with some, add more gradually) and mix gently but well.
  • Serve garnished with chili peppers and cilantro
