Chewy Chocolate Chip Cookies

2 & 1/3 Cups of Flour
1 TSP Baking Soda
1 TSP Corn Starch
1 Cup Brown Sugar
1/2 Cup Granulated Sugar
1 & 1/2 Cup Chocolate Chips
3/4 Cup Melted Butter (Opaque, not boiling)
1 Egg at Room Temperature
1 Egg Yolk at Room Temperature
1 TBSP Vanilla Extract
Directions
- Cream the Butter and Sugars in a bowl
- Whisk in the Eggs and Vanilla and mix till light and creamy
- Mix your dry ingredients
- Add wet to dry and mix well
- Scoop out 1/4 cup of dough and roll into a ball, place on parchment-lined sheet.
- Place in freezer for 15 minutes to firm up.
- Pre-heat the oven to 325
- Space out the cookies to have them 3″ apart
- Bake for 12-15 minutes, when edges look golden but center appears under-cooked
- Loot cool on a wire rack for 5 minutes minimum before diving in
Notes
- We use Milk Chocolate Chips here, for a change. Kids love them.
- These are big cookies.
- I double the batch, because 12 cookies is never enough!
