2 Tablespoons olive oil
4 tablespoons butter
6 large garlic cloves, minced
1 1/4 pounds (600 grams) large shrimp prawns, shelled with tails on or off
Salt and fresh ground black pepper to taste
1/4 cup rich chicken broth
1/4 teaspoon crushed red pepper flakes
2 tablespoons fresh lemon juice
1/4 cup chopped parsley
Directions
- Add the oil and 2 TBS of butter to the pan at a medium heat
- Add garlic and sautee for a couple of minutes, should be very fragrant
- Add shrimp, season with S&P
- Cook for 1 minute, then flip for one minute
- Add chicken stock and red pepper flakes, simmer to reduce liquids by half
- Add lemon juice, remaining butter and parsley
- remove from heat immediately
Notes
- This fed our family of 5 nicely with no leftovers.
- Costco sells 2 pound bags of shrimp that we use
- We like with more butter and served over rice
