2 can Diced Italian tomatoes (San Marzano brand works famously (28oz cans))
6 tablespoon olive oil
2 onions (medium) (Diced)
1 Garlic bulb, minced
1 tablespoon Italiano seasoning (Club House brand)
1 tablespoon Oregano
1 teaspoon sea salt (adjust amount to your taste)
1 teaspoon fresh ground pepper (adjust amount to your taste)
1 tablespoon Parsley
Directions
- In a large dutch oven, heat oil over medium high heat and add onions cooking until well carmelized. Add garlic and stir until fragrant. Add diced tomatoes, spices, stirring well. Simmer for an hour or so.
Notes
- Freezes well, so make a double batch! I find this sauce really benefits from a longer simmer session, then left to sit overnight and reheated.
- You can add pretty much anything to this sauce, sausage, mushrooms, marbles, whatever. The secret is locked away in those magical cans of diced Italian tomatoes.
