1 cup Butter, cold and cubed
2 & 1/2 cups (325g) AP Flour
1 TSP Kosher Salt
1 TBSP Granulated Sugar (only if making sweet pies)
6 – 8 TBSP Ice Cold Water
Directions
- Mix 1 & 1/2 cups the flour, sugar (if using) and salt in a large bowl.
- Using a pastry blender, cut in the butter. Cut till mix looks like larger bread crumbs
- Add remaining Flour and work the flour into small crumbs, like pea sized.
- Add 4 TBSP of the Cold Water and mix well by hand. Add more water as needed. Dough should be able to pinch without breaking. If not, add more water. Not too much or crust will be chewy!
- Divide dough into 2 balls and use as needed.
