4 chicken breasts, skinless and deboned
5 tomatoes, quartered
1/2 cup balsamic vinegar
1/4 cup fresh basil, loosely packed
2 tablespoon olive oil
2 clove garlic, minced
1/2 teaspoon Salt
1/4 teaspoon black pepper, ground
1. Combine garlic, tomatoes, vinegar, oil, basil, black pepper, and salt in a food processor.
2. In a large resealable plastic bag, add chicken and marinade. Make sure chicken in well coated. Seal bag and allow to marinate for 6-8 hours in refrigerator.
3. Preheat grill. Place chicken on grill and cook on medium heat for 10-12 minutes, turning once. Remove chicken from heat and garnish with diced tomatoes or chopped basil.
Serve with pasta or potato salad. Also, a little extra garlic or olive oil wouldn't hurt.
