Quinoa Pilaf

Ingredients: 

1 cup Quinoa
1 clove garlic
1/2 onion (Halved sliced and diced)
2 cup Broth (Chicken or Vegetable )
1 Salt & pepper to taste
1 Carrot (Grated or julienne)
1 pinch Safron
1 tablespoon olive o

Instructions: 

Heal oil an saute Onions, garlic, carrots
When onions are soft add Quinoa
Brown Quinoa for 5-10 minutes
Add Chicken stock, slat and pepper, safron.
Bring to a boil, cover and lower heat to lowest setting.
Check after 15 min, remove when liquid is gone.
Serve.

Notes: 

This can be modified by adding pine nuts, peas, sliced toasted almonds.... We like to serve with BBQ Chicken taken off the bane and mixed in to the pilaf.
