1 cup Salsa
4 large flour tortillas
1 1/2 cup Monterey jack cheese (grated)
2 Scallions (finely sliced)
Spread 1/4 cup salsa on half of each tortilla. Add chicken and pepper.
Divide the cheese between the four tortillas. Top cheese with scallions, cajun seasoning and cilantro.
Fold quesadillas in half and place on a baking sheet. Broil quesadillas on middle rack under high heat for four minutes on each side or until golden and cheese had melted.
Let rest for a few minutes before slicing into wedges and serve with sour cream.
