1 onion (vidalia/sweet)
8 slices of bacon
2 tablespoon Chipotle BBQ Peanut Seasoning (from this site)
1) Peel and quarter the onion. Halve all the quarters, giving you 8 wedges.
2) Dredge the wedges in the BBQ mix (or apply your favourite rub)
3) Wrap each wedge in one slice of bacon
4) Cook low and slow, until the bacon is perfect and the onion inside is softened (not mush!)
Bacon wraps MUCH easier (and more stickily) when it's at room temp. I put the pack in a bowl of warm water prior to starting.
On my Traeger, I smoked these over hickory for about 2 hours at 250.
To serve, insert toothpicks through the back of the wedge, and slice between them!
